(01) Chef · Antibes / Megève

I cook in other people’s kitchens. I’ve done it 612 times.

Nineteen years at the stove, the first eleven in restaurant kitchens, the last eight in yours. I write a menu for every dinner, shop for it that morning, and leave before the coffee gets cold.

(02) The story

Eleven years in restaurants. Eight in your kitchen.

I grew up above a bakery in Annecy, which is the wrong place to grow up if you want to sleep past four. At nineteen I had my first proper job, at a lakeside hotel restaurant where the head chef kept a list of everything I broke. It ran to two pages by Christmas.

Then eleven years in restaurant kitchens: Lyon, London, then back south, to a forty-cover place in Antibes where I ran a brigade of nine and wrote a new menu every week because the market didn’t care what we’d printed. That’s the habit I kept.

In 2018 a regular asked if I’d cook her sixtieth at home. I said yes before I’d asked how big the oven was. By the end of that summer I’d cooked in fourteen more kitchens, and I gave notice in October.

What hasn’t changed: the menu is written for your guests, not pulled from a folder. I shop the morning of the dinner, I clean as I go, and I’ll tell you on the phone if what you’re asking for isn’t a good idea.

(03) How I work

The brigade, the languages, the diets.

The brigade

The brigade

I cook alone up to eleven guests. From twelve, one person joins on the floor; from sixteen, a second cook; from twenty, a second person on the floor. Always the same three people, each named on your quote.

Languages

Languages

French and English at the stove; Italian well enough to argue with a fishmonger in Ventimiglia; German well enough to take a dinner order in a chalet in Megève.

My father is coeliac. Nobody at the table knew the menu had changed for him; he found out from the card the next morning.

She left the last two dinners in the freezer, labelled with the oven temperature. My son reheated the daube on his own.

The quote named four people, their hours and their jobs. Our finance team forwarded it with a compliment. A first.

Four flights of stairs, no lift, two crates. She was still smiling at the top, which is more than I manage with groceries.

Dinner for friends, Villefranche-sur-Mer

We asked for no shellfish for one guest. It came back with no shellfish for anyone, and a line on the card saying why.
